Baked Apples with Rosemary-Infused Honey

Honey – 1/2 cup
Rosemary – 3 sprigs
Apples – 6, medium size
Blue Cheese – 1 cup
Walnuts – 1/2 cup, chopped
Apple Cider – 1 cup


(1) Preheat your oven to 325 degrees. In a small saucepan, gently heat honey with rosemary sprigs. Core six apples, making sure not to puncture the bottom so they hold their juices. Combine a creamy white cheese, either goat cheese or a blue cheese, with chopped nuts, like walnuts or pecans. Stuff the apples with the cheese filling. Remove the rosemary sprigs from the honey. (2) Place your apples in a baking dish, pour apple juice all around the outside, and drizzle the tops with honey and bake for 40 minutes. Serve warm for a healthy and seasonal dessert!
